I am a country girl at heart, I guess. Because it gives me such delight at being able to pick my breakfast right from the garden.
This is a blackberry bush we planted only last year. We had a few berries from it last summer, but we are having more this year. Most of the berries are bigger than my thumb! Each morning there are just enough to sprinkle on a bowl of cereal (and a few cherry tomatoes for lunch!!)
or, just enough to make a small batch of Skillet Jam
1 Cup Blackberries
1 Cup Sugar
Mix in a cast iron black skillet
Cook over medium low heat. The heat and the sugar will bring out the juices, so there is no need to add any water. Cook, stirring frequently, for about 15-20 minutes, or until it gets kind of thick.
Add some freshly baked hot buttered biscuits
And you have breakfast!!!!
and, a happy little boy!!!!
Sometimes, it is best to just forget the diet and enjoy summer's bounty!!
